A deep green frittata packed with parsley, cilantro, dill and chives, studded with walnuts and barberries. A Nowruz classic.
Kuku sabzi is almost all herbs, held together with just enough egg. It is served at Nowruz next to sabzi polo ba mahi, but it is just as good as a picnic lunch, rolled in lavash with yogurt and pickles.
The herbs must be dry before chopping or the kuku will be soggy, and the chopping should be fine but not a paste.

Instructions
- Wash the herbs, dry them completely, and chop finely. You should have about 4 packed cups.
- Beat the eggs with the flour, baking powder, turmeric, salt and pepper until smooth. Fold in the herbs, walnuts and barberries. The mixture should be mostly green, just bound by egg.
- Heat the oven to 180°C (350°F). Put the oil in a 23-cm (9-inch) baking dish or ovenproof frying pan and heat it in the oven for 5 minutes.
- Pour the mixture into the hot oil, smooth the top, and bake for 30 to 35 minutes until set in the middle and crisp at the edges.
- Let it rest for 5 minutes, then cut into wedges or squares. Serve warm or at room temperature with yogurt, bread and pickles.
Tips & variations
- On the stove: cook in a covered frying pan over low heat for 15 minutes, cut into quarters, flip each, and cook 10 minutes more uncovered.
- Frozen chopped kuku herbs from Persian groceries work well; thaw and squeeze dry first.
