Faloodeh comes from Shiraz and is one of the world's oldest frozen desserts, made long before refrigeration with ice stored in desert ice houses (yakhchal). Fine starch noodles are frozen in a rosewater syrup, then broken up into a sorbet full of chewy strands.

It is served with a squeeze of lime, and often with sour cherry syrup and a scoop of saffron ice cream (bastani) on the side.

Instructions

  1. Dissolve the sugar in the water over medium heat, simmer for 2 minutes, and let cool completely. Stir in the rosewater and lime juice.
  2. Cook the noodles in boiling water for 2 to 3 minutes until just tender. Drain, rinse under cold water, and cut into 3 to 5 cm lengths.
  3. Stir the noodles into the cold syrup and pour into a shallow metal container. Freeze.
  4. Every 30 minutes for about 3 hours, scrape and stir with a fork to break up the ice crystals, until frozen into slushy, separate strands.
  5. Let it soften for 5 minutes, then scrape into chilled glasses. Serve with lime wedges, sour cherry syrup, or a scoop of saffron ice cream.

Tips & variations

  • The noodles should be thin and slightly chewy; thick rice noodles turn hard when frozen.
