Doogh is the drink of the Persian table, poured with kabobs, chelow and abgoosht. It is simply yogurt thinned with water, seasoned with salt and dried mint, and served very cold.

Bottled sparkling doogh is everywhere in Iran; at home you can make it fizzy with chilled sparkling water.

Instructions

  1. Whisk the yogurt until smooth. If using still water, whisk it in gradually; if using sparkling water, add it last and stir gently so it keeps its fizz.
  2. Crush the dried mint between your palms into the jug and season with salt.
  3. Chill for at least 30 minutes so the mint infuses, stir, and serve over ice, sprinkled with rose petals.

Tips & variations

  • A few slices of cucumber or a pinch of dried pennyroyal (puneh) add a different freshness.
